Green Goddess Quinoa Salad

Ingredients
- 1 cup quinoa, cooked and cooled
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 cup edamame, cooked and shelled
- 1/4 cup green onions, chopped
- 1/4 cup fresh cilantro, chopped
- For the Green Goddess Dressing:
- 1 cup fresh spinach leaves
- 1/2 cup Greek yogurt
- 2 tablespoons olive oil
- 1 clove garlic
- 1 tablespoon lemon juice
- Salt and pepper to taste
Directions
In a large bowl, combine quinoa, cucumber, cherry tomatoes, avocado, edamame, green onions, and cilantro.
In a blender or food processor, combine all the ingredients for the Green Goddess Dressing. Blend until smooth.
Pour the dressing over the quinoa salad and toss until well coated.
Chill in the refrigerator for at least 30 minutes before serving.
