Grilled Lemon Garlic Chicken with Broccoli

Ingredients:
2 boneless, skinless chicken breasts
1 lemon (juice and zest)
3 cloves garlic, minced
2 tablespoons olive oil
Salt and black pepper, to taste
1 teaspoon dried oregano
1 teaspoon paprika
1 head of broccoli, cut into florets
Fresh parsley, chopped (for garnish)
Instructions:
Preheat your grill or grill pan.
In a small bowl, mix together the lemon juice, lemon zest, minced garlic, olive oil, salt, black pepper, dried oregano, and paprika to create a marinade.
Place the chicken breasts in a shallow dish and pour half of the marinade over them. Reserve the remaining marinade for later. Let the chicken marinate for at least 15-20 minutes.
While the chicken is marinating, steam or blanch the broccoli florets until they are crisp-tender. You can do this by boiling them for 2-3 minutes or steaming them for 5-7 minutes. Drain and set aside.
Grill the marinated chicken breasts for about 6-8 minutes per side or until they are cooked through and have nice grill marks.
In the last few minutes of grilling, brush the chicken with the reserved marinade for added flavor.
Serve the grilled chicken on a plate alongside the steamed broccoli. Garnish with chopped fresh parsley.
