Lemon Garlic Green Bean Almondine

Ingredients
- 1 pound fresh green beans, ends trimmed
- 1/2 cup sliced almonds, toasted
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Direction
Steam the green beans until crisp-tender, about 3-4 minutes. Immediately transfer to an ice bath to stop the cooking process and preserve the vibrant green color. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Add the blanched green beans to the skillet, tossing to coat them in the garlic-infused oil. Cook for an additional 2-3 minutes until heated through.
Drizzle lemon juice over the green beans, add lemon zest, and season with salt and pepper to taste. Toss to combine.
Just before serving, sprinkle toasted sliced almonds over the green beans and garnish with fresh chopped parsley.
