Tofu and Vegetable Scramble
Ingredients
- 1/2 block firm tofu, crumbled
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 1 cup spinach, chopped
- 1 clove garlic, minced
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- Avocado slices for serving
Directions
In a skillet, heat olive oil over medium heat. Add diced onions and bell pepper, sauté until softened.
Add minced garlic and chopped spinach to the skillet. Cook until the spinach is wilted.
Add crumbled tofu to the skillet, along with turmeric, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
Serve with avocado slices on the side.
