Zucchini Noodle with Pesto Recipe

Ingredients:
- 2 large zucchinis, spiralized into noodles
- 1 cup cherry tomatoes, halved
- 1/2 cup olives, sliced
- 1/4 cup pine nuts, toasted
- 2 cups fresh basil leaves
- 1/2 cup nutritional yeast
- 1/2 cup olive oil
- 1 clove garlic
- Salt and pepper to taste
- Lemon juice for a burst of freshness
Directions:
In a food processor, combine basil, nutritional yeast, pine nuts, garlic, and olive oil. Blend until smooth to make the pesto.
In a large pan, sauté zucchini noodles over medium heat until they are just tender (about 3-5 minutes).
Toss the zucchini noodles with cherry tomatoes, olives, and the prepared pesto.
Season with salt, pepper, and a squeeze of lemon juice.
Top with additional pine nuts for garnish, and enjoy!
